Pork neck with tomato sauce with leeks and beans

Ingredients for 8 servings:

Olive Oil 180ml
Pork neck 3kg before cleaning
800g Onion
40g Fresh Onion
250g Carrot
150g celery
15g Garlic
800g Leek
1kg Tomatoes
50g tomato paste
2 pieces Daphne
White wine 1lt
Beans (white medium) boiled 1,5 kg
5 liters chicken stock
15g coarse sea salt
Black pepper mill


Method

1. Saute pork neck in olive oil until golden brown. Remove the meat from the pan and set aside.
2. In the same pan saute the onion the carrot, the celery, fresh onion, garlic, bay leaves.
3. Add tomatoes and tomato paste. Sprinkle with flour.
4. Pour in white wine and add chicken broth.
5. Add the pork neck and let it boil for 1 hour over low heat and place the lid over the cooking pot.
6. Strain the liquid.
7. Add the broth leek sticks and beans.
8. Let the meat cook in fresh broth with beans and leek sticks for 1 hour.
9. At the end cut the pork neck sliced.
10. Allow the liquid from cooking to condense at very high heat.
11. Place on a plate of beans, sticks leek and pork neck. Drizzle with sauce
