Ingredients

Metaxa 5 * 40ml
Masticha liquor 20ml
orange
3 cubes of Brown sugar
Crushed ice

Instructions

1. Muddle the sugar into the orange wedges in an old-fashioned glass

2. Mix all ingredients with a pestle

3. Pour Metaxa and Masticha liquor into the glass

4. Mix all ingredients in a shaker.

5. Garnish the cocktail with orange slices.

Blue Flag @ Aquis Silva Beach!!

The Blue Flag is a voluntary eco-label awarded to over 3650 beaches and marinas in 44 countries across Europe, South Africa, Morocco, Tunisia, New Zealand, Brazil, Canada and the Caribbean.
The Blue Flag Programme is owned and run by the non-government, non-profit organisation the Foundation for Environmental Education (FEE).
In Greece this year 387 beaches were awarded with Blue Flag as well as the beach of Aquis Silva Beach, which has been awarded for 14 continuous years.
The purpose of this program is to bring environmental awareness annually at around 44 countries and aims to make our beaches better and safer for swimming and to protect the natural environment. Each coast that is being awarded acquires the right to raise the Blue Flag as a certificate of quality from June until October. Every year a new application needs to be submitted every year.
Beaches that are awarded the Blue Flag based on compliance with 32 criteria covering the following:
1) Environmental Education and Information
2) Water Quality
3) Environmental Management
4) Safety and Services
All Blue Flags are awarded for one season at a time.
If the criteria are not fulfilled during the season or the conditions change, the Blue Flag may be withdrawn.
The delivery of the certification as well as the suspension of the flag was made on Thursday 21/07 by the Peninsula Harbour Master Mr Kapsis.

Pork neck with tomato sauce with leeks and beans

Ingredients for 8 servings:

Olive Oil 180ml
Pork neck 3kg before cleaning
800g Onion
40g Fresh Onion
250g Carrot
150g celery
15g Garlic
800g Leek
1kg Tomatoes
50g tomato paste
2 pieces Daphne
White wine 1lt
Beans (white medium) boiled 1,5 kg
5 liters chicken stock
15g coarse sea salt
Black pepper mill


Method

1. Saute pork neck in olive oil until golden brown. Remove the meat from the pan and set aside.
2. In the same pan saute the onion the carrot, the celery, fresh onion, garlic, bay leaves.
3. Add tomatoes and tomato paste. Sprinkle with flour.
4. Pour in white wine and add chicken broth.
5. Add the pork neck and let it boil for 1 hour over low heat and place the lid over the cooking pot.
6. Strain the liquid.
7. Add the broth leek sticks and beans.
8. Let the meat cook in fresh broth with beans and leek sticks for 1 hour.
9. At the end cut the pork neck sliced.
10. Allow the liquid from cooking to condense at very high heat.
11. Place on a plate of beans, sticks leek and pork neck. Drizzle with sauce

4. Create a contest to see who can build the most impressive sand castle
5. Cook up hamburgers and hot dogs on a beach grill. A BBQ is always the perfect compliment to a beach party.
6. Pack a sweatshirt to keep you warm as the evening cools off
7. Use citronella candles on tables and citronella yard stakes throughout party area to keep bugs away.
8. Provide lots of water bottles, along with sodas and juice boxes.
9. Have beach balls, floats, and water guns available for use by your guests.
10.Beach party music. Just to get you into the party spirit.
